Question:

Low calorie but nutritious vegan recipes, or blog?

I'm about 15 pounds overweight and I would like to slim down as quickly as possible. I recently became vegan and would love to find some good recipes that contain mostly vegetables but limit even the good fats because i'm trying to restrict my caloric intake. It would be nice to cook some new foods, I am also exercising again and trying to limit my snacking and overeating. I would love to find a diet blog from someone who is dieting AND vegan. I'm trying to limit nuts and grains and eat mostly fruits, veggies, and protein until my weight goes down.

  1. If you have a juicer then juicing different combinations of fruit and veggies (depending on what you like) can be good in replacement of a "snack". If you don't have a juicer then you should buy one as they're always good to have.

    You should eat a minimum of 1200 calories a day regardless of how much weight you are trying to lose. Any less than that is unhealthy. Even though good fats contain calories, they are GOOD calories and your body needs them.

  2. Couscous or quinoa with beans (such as black or kidney). You Tempeh and stir fry it with vegetables.

    A lettuce/veggie wrap.

    A simple salad.

    Grilled or steamed veggies with seasonings.

    Ratatouille.

    Simple soup.

    Whole grain pita bread with lettuce, tomato, and hummus.

    Oatmeal with fruit.

    Fruit salad.

    Baked or broiled tofu or tempeh.
