Question:

Low-calorie/fat, meat-free Italian side dish to serve with Cheese Manicotti?

Is there such a thing? :)

You see, I'm making Cheese Manicotti as the main dish and Tiramisu as the dessert. I really wouldn't like my guests to have a heart attack, so I decided to go low-calorie on the side dish. Any suggestions? Maybe some kind of vegetable?

  1. You could steam some zuchini or squash and serve it up with seared red peppers. Some asparagus with lemon juice would also be good. Or you could make it extremely easy and just toss a simple salad. All are low in calories, and all are very delicious and colorful.


  2. I like steamed broccoli or asparagus with lemon juice and Parmesan cheese.

  3. You don't really need anything else except maybe some garlic bread and a tossed salad.

  4. you can grill some courgette, peppers and aubergine slices, and serve it as they are or chopped, with a sauce made of fresh tomatoes in little pieces, basil leaves, olive oil,salt, oregano...very healthy and tasty!

  5. An awesome Spring Green Salad with fresh Mozzarella  Cheese, Apple, Orange and Strawberry Chunks as well as Grape Tomatoes dressed with a semi-sweet Balsamico Extra Virgin Olive Oil dressing would be perfect along with some crusty Rustic Bread.
