Question:

Low cost nutritional food selection advice please.?

I am diabetic so I need to avoid high starch foods. I'm also a veggie so I can't eat meat and avoid milk and egg. I try to avoid tofu because contrary to the hype soya is not good for you in quantity, likewise for rapeseed (canola oil). Oh, and I'm poor. :-) So, I'm trying to come up with a recepie for a staple food that is high in EFA, protien with a balanced amino profile, low in sugars and starches, and inexpensive. Bonus if all the ingredients can be stored for 1-2 weeks unrefrigerated. I'm not too worried about vitamins because I can take a multivitamin if needed and seaweed for minerals.

As for cooking I figured I would make a bread or porridge but I'm open to suggestions.

So far it looks like chickpea flour is a good first ingredient. Its low cost and high in protien. But I couldn't find info on the amino acid balance and I don't know what would complement it. Barley flour? chia seed $$? Some kind of bean flour?

I welcome all advice.

  1. In a slow cooker, combine an onion cut in half,  assorted dried beans (navy, pinto, garbanzo, lentil, etc.) and barley and cook until tender. Once cooked completely add salt and spices to taste and mix in frozen carrots and peas. I usually use chicken breast, but this is just as yummy.

  3. Manna might fit the bill.  It doesn't keep well, but it's delivered daily with the dew of the morning, so that should work.
