Make Tacos: Brown 3 lbs ground beef..add garlic, pepper and salt to taste..2 pounds shredded cheese..2 diced onions, 2 heads shredded lettuce, 4 large tomatoes diced, 30 taco shells (corn) 20 taco shell (flour), 1 small can black olives (sliced), 1 small jar dill pickles (sliced), 1 pint sour cream, 2-3 avocados diced, 2 16 ounce jars of Picante Sauce 1 medium, 1 mild..sliced hot peppers...and set up a Taco Bar..Paper Plates..Iced Tea in Plastic cups..and Ice Cream Cones for dessert..This can be altered in any way you want it.

  3. It is for women, men or a mixed crowd?  Chicken salad is a big hit with the ladies (good on croissants, wrapped in a big tortilla, served with fancy crackers or stuffed in a pita pocket), served with fresh fruit salad and soup.

    If men are involved, snazzy sandwiches are also nice, but include meats like roast beef, ham, etc.

    You could cook a beef brisket or pork roast in a crock pot and serve it with potato salad, slaw and dessert.  Serve it with an assortment of breads on the side, so that folks can make sandwiches or eat it with a fork and BBQ or horseradish sauce.

  4. A veggie/dip platter is always good as an appetizer with:

    CRAB DIP

    1 med. onion, chopped

    2 cloves garlic, minced

    1/4 lb. butter

    2 c. sour cream

    1 tsp. curry powder

    1/2 tsp. cumin

    13 oz. crabmeat

          Mix all together and heat (thicken slightly with a little flour, if needed)... Serve hot with crackers

    If men will be there, you might want this:

    BONELESS PORK LOIN

    2-4 lb. boned, rolled pork roast

    1 Tb. dry mustard

    1 tsp. salt

    pepper & paprika to taste

    1/2 tsp. caraway seed

           Rub roast with seasonings.  Roast on rack in shallow pan, uncovered, at 350 until thermometer registers 185 (or 45-50 min per lb).  Slice thin ... great for a buffet because it can be served hot or cold ....(you should probably make 2)........serve with rice pilaf

    If it's just for ladies, this is a very unusual, FANTASTIC dish:

    BLINTZ SOUFFLE

    2 pkg (12 ) frozen blintzes (cheese, cherry, blueberry,apple)

    1/2 c. butter

    4 eggs

    1/4 c. sugar

    1/2 tsp. cinnamon

    1-1/2 c. sour cream

    1-1/2 tsp. vanilla

           Melt butter in 9x13" pan.  Place blintzes in single layer in pan.  Roll to cover with butter.  Combine remaining ingredients; beat well and pour over blintzes. (May be prepared the night before to this point)  Bake uncovered for 45 min-1 hr at 350.  ...Serves 6-8....(I like to alternate cheese & cherry blintzes, but you can do whatever flavors you like) - you might want to double this recipe for 14

    GREEN SALAD - Carmelize some walnuts (stirfry in a pan with sugar, until sugar melts & coats nuts),  drained mandarin oranges, sliced red onion and Balsamic Vignarette dressing

    And, one of my favorite desserts:

    LEMON MELTING MOMENTS

    1 pt (2 c. heavy whipping cream

    1/2 c. sugar

    juice of 4 lemons

    grated zest of 2-4 lemons

    2 TB. sweetened, condensed milk

    8 whole fresh strawberries

          Combine all ingredients (except berries) in well-chilled mixing bowl and beat until very thick.  Divide among 8 parfait glasses and chill.  Serve with whole strawberry garnish (can also add a Pepperidge Farm pirouette cookie) ... Double this

    These are all recipes that can be done the day ahead...
