MAKING STRAWBERRY WINE WITH THE LITTLE LEAVES ON THE STEM WILL HURT THE TASTE OF THE WINE?

I want to make strawberry wine. I get the tops of the strawberry that have the little leaves on them. I thought of just boiling them as is and getting the flavor and sugars from them only and discarding the fruit. Would the leaves make the wine taste bad?

  1. I don't know much about strawberry wine, but some wines (made with grapes) are made with the stems. During fermentations the steams and the seeds will start to break down and release their tannins. Tannins from steams and seeds are very bitter. This ends up making the wine more bitter. These wines are only balanced because because of their higher acidity, witch they get because they're picked early on in the ripening stage.

    So, I think it will make a difference. It may make it more bitter, but this could be better if you are using lots of small strawberries.
