MN Vietnamese restaurant spring roll sauce recipe (Vegan)?

I see alot of spring roll sauce recipes here but I am looking for the one that requires Hoisoin sauce, red chili paste and Peanut butter.. it looks like a nice dark brown smooth sauce. Its served at places like Than Do or Kinh do. What is the ratio of hoisoin to peanut butter? Thanks!

  1. Cashew Nut sauce - Yield: 2 cups

    ½ cup roasted cashews, course ground

    2 tablespoons peanut oil or canola oil

    4 cloves garlic minced

    2 teaspoons of chili paste

    4 tablespoons tomato paste

    1 cup broth or water

    1 teaspoon sugar

    2 tablespoons peanut butter

    ½ cup Hoisin sauce

    Ground the roasted cashews, set aside.

    Heat the oil in a small saucepan. When the oil is hot, add the garlic, chili paste, and tomato paste. Fry until the garlic is golden brown. Add the broth, sugar, peanut butter and Hoisin sauce, and whisk to dissolve the peanut butter. Bring to boil. Reduce the heat and simmer for 3 minutes. Mix ground cashews in to sauce.

    Serves 6


  2. No sure, but i would go to Cook.com and look up peanut sauce and it lists some of the ingerients under each recipe.  Hope that helps.

    Really, Vietnamese people serve goi cuon with a more tasty sauce. Beside peanut (sauce and seed), chilli..., it also includes tamarind, coconut water... But I think the recipe below is appropriate for such a person who has just discover Vietnamese taste as you.

  4. don't really worry about what type of sauce it is...my parents are Asian and they make spring rolls all the time and there is one that they made before close to the one ur tellin' me...it has a mixture of hoisoin sauce, soy sauce, a bit a peanut butter and a spice paste...you usually have to cook it in a wok or pan so it's smoothe....most sauces my parents make is just from what they like...(they even added sour cream and egg to it once..)...so there's no "right" combination to a sauce...it's just what you like and preffer
