Madeira. Can anyone recommend a resort or hotel for a couple in their early sixties?

This is where my wife and I stayed....it's not in Funchal itself but it's not far. Garajau is a small town/village with a statue like the one in Rio de Janeiro (only smaller of course). Nice place.

I would recommend hiring a car so that you can travel at your own leisure round the island. Don't forget the levada walks....very tranquil , the quaint village of Santana , the fish farm at Ribeiro Frio (cold river) and if you're feeling energetic, a walk up Puico Ruivo, the highest point on the island. Don't forget the gardens of Funchal and the floating restaurants in the harbour.
