Major Vegetarian Article Stress!

Hello, I need a nutritionist/physician that can explain the substitutes for protein/iron/anything in a vegetarian diet. I am doing an article on vegetarianism,and I interviewed the people I needed, going in favor of vegetarianism, but my editor wants me to get the other side. I do not have time to schedule an appointment with a nutritionist as I have school and the article is due tomorrow--she e-mailed me about this an hour ago--and I would appreciate any links to a nutritionist--needs to have the name--along with the above mentioned info.

    listen...      you don't have to substitute.       green, leafy veggies are rich in iron...   fruits majorily are rich in protein,  so are tubers and beans...  

    hum,  a nutritionist who wants this  info?  what kinda nutritionist are they?


  2. If you go to www.vrg.org (Vegetarian Resource Group), you will see that it's not that hard to get protein on a well-balanced diet.  Get enough calories, make sure you're not eating junk food, and you will get ample protein.

    Vegetarian Resource Group has a list of vegan foods rich in iron and calcium.  But to be quick:  Meat has heme iron while plants have non-heme protein.  For non-heme iron foods (largely greens and beans), you can increase absorption by eating foods rich in vitamin C.

    I'm sorry, but I don't know anyone on the other side.
