Question:

Major help needed...what should i cook my bf for dinner???

I have only ever cooked 2 meals from scratch so am a very novice chef! I have managed to cook chicken b*****s with pancetta and mozarella as well as making my own lamb and chilli meatballs so far but need a recipe for something easy to cook tonight! Mucho thankies

  1. Honey, I'm in the *same* situation! I can cook only 2 things well, and the rest is food that he can't eat cos' of our cultural differences.

    What I did was, go to http://food.yahoo.com/

    They have Great recipes, classified for ease/health/complexity etc etc.

  2. Chicken Parm and Oil Aglio Olio

    4 boneless skinless chicken breast halves (about 2 pounds)

    1 1/2 teaspoons salt

    5 cups bread crumbs

    1 tablespoon dried oregano

    1 tablespoon dried thyme

    Freshly ground black pepper

    All-purpose flour, for dredging

    6 large eggs, beaten

    2 tablespoons whole milk

    Vegetable oil, for frying

    Olive oil, as needed

    7 cups Quick Marinara Sauce, recipe follows

    2/3 cup grated Parmesan, divided

    1 pound fresh mozzarella, thinly sliced

    Put each chicken breast between to pieces of plastic wrap and pound them out to a uniform thickness, no more than about 1/3-inch.

    In a large bowl, whisk together the 1 1/2 teaspoons salt, bread crumbs, oregano, thyme, and season with pepper.

    Place the flour in a large plate or bowl. In another medium bowl, whisk the egg and milk together. Dredge a chicken breast in the flour and shake off excess. Then dip it into the egg mixture and finally dredge in the seasoned breadcrumb mixture. Shake off any excess breading and transfer to a baking sheet. Repeat with the remaining chicken.

    Preheat the oven to 400 degrees F.

    In a large straight-sided skillet, pour the vegetable oil to a depth of 1/2-inch. Heat the oil over medium heat until it registers 400 degrees F on a deep-frying thermometer. (The oil must be heated to 400 degrees F so that the breaded chicken, when added, will drop the temperature of the oil to the proper frying temperature of 375 degrees F.)

    Fry 1 breast at a time until golden brown on each side, about 6 minutes total. Using tongs, transfer to a paper towel-lined baking sheet and season with salt, to taste.

    Lightly brush a baking dish, large enough to place the chicken in a single layer, with olive oil. Cover the bottom of the baking dish with half of the marinara sauce and arrange the chicken over the sauce. Cover with the remaining sauce. Scatter the Parmesan and the mozzarella on top. Bake until sauce is bubbling and the cheese is brown, about 30 minutes. Serve immediately.

    Quick Marinara Sauce:

    3 tablespoons extra-virgin olive oil

    1 small onion, diced

    4 cloves garlic, chopped

    2 teaspoons dried oregano seasonings

    7 cups whole, peeled, canned tomatoes in puree (about 2 (28-ounce cans), roughly chopped

    1 tablespoon kosher salt

    Freshly ground black pepper

    Heat the oil in a medium saucepan over medium-high heat. Saute the onion, garlic, and Italian seasoning. Stir until lightly browned, about 5 minutes. Add the tomatoes and bring to a boil. Lower the heat to a simmer, cover, and cook for 10 minutes.

    Stir in the salt and season with pepper, to taste. Use immediately or store covered in the refrigerator for up to 3 days or freeze for up to 2 months.

The possibilites are endless..how about some good italian food  like I suggest "Lasagna" , and some fresh warm moist garlic brerad and a  simple tossed salad with your fave toppings....easy and u can prepare it ahead of time. Need  a easy recipe  get to me. Go ahead and use store bought sauce~~> he wont be able to tell the difference  with everything else in it. Cheat a lil....lol

  4. How about a nice grilled steak?

    Guys love 'em, and they're really easy to make. You can serve with some boiled greens and/or baked potatoes. the recipe below is for 4, just halve quantities for 2. And if you don't feel like the sauce, you'll find it's great on its own too.

    Serves 4

    INGREDIENTS

    For the steak:

    4 rump steaks  

    4 tablespoons olive oil

    2 tablespoons freshly ground black pepper (or to taste)

    2 tablespoons coarse salt (or to taste)

    For the sauce:

    150 ml (1/4 pint) tomato sauce

    2 tablespoons soft brown sugar  

    2 tablespoons soy sauce

    1 tablespoon vinegar  

    25 g (1 oz) butter  

    1 tablespoon oil  

    ½ cup fresh chopped parsley  

    PREPARATION:

    Steaks:

    Brush the olive oil on both sides of the steaks, and rub on the pepper.

    Grill the steaks to preferred degree

    Sprinkle the desired amount of coarse salt on the steaks

    Transfer the steaks to a serving dish and keep warm while making the sauce.  

    Sauce:

    Combine tomato sauce, sugar, soy sauce and vinegar in a measuring

    jug and make up to 300ml (1/2 pint) with cold water.

    Add the sauce to a frying pan. Bring to the boil, stirring.

    Pour a little of the sauce over the steaks and garnish with a sprinkling of Parsley.

    Serve remaining sauce separately

  5. Hi - my trusty dinner that not even I cannot s***w up is salmon fillets with egg fried rice (I cheat and buy ready made uncle benns!).

    Only takes about 10mins, filling and tasty! Of course you can put sauces with it, or bulk out the rice with veg etc, make it your own recipe

  6. Spanish chicken

    1 tin of tomatoes

    1 large onion

    Chicken pieces (cooked )

    Peppers (red, green & yellow )

    Place peeled onion & tomatoes in a liquidizer, process for 1 minute.

    Cut & de-seed peppers

    Place chicken pieces in a caserole dish, pour half tomato & onion sauce over, add layer of mixed cut peppers, add remaining half of sauce.

    Cover dish with lid, place in oven 180*c for 30 mins.

    Serve with rice or steamed new potatoes.

    Just a suggestion.

  8. Breaded Chicken and veggies.

    2 large bone-in chicken b*****s

    1/4 cup breadcrumbs

    1/4 cup parmesan cheese

    1/2 tsp. salt

    pinch of garlic powder

    1 tsp Italian seasoning

    1/2 tsp parsley

    1/4 cup margarine or butter, melted

    Mix all the ingredients together except for the butter. Dip Chicken into melted butter, then coat with crumb mixture. Bake at 350 for 1 hours, until juices run clear.

    I would serve this with rice (follow the directions on the box) and maybe some frozen corn.

    Just read the paket of the salmon and it will be easy.

    Pasta with spicey meatballs and putinesca sauce

    Haddock smothered on top with warm meltey mozzerella cheese

  11. Beans on toast.

    Cheese fondue, melted cheese wih bits of bread and stuff that goes with cheese.

    If not then try hamburgers they always go down well.

    Or Take away!!!

  12. Something easy, something really easy..

    Get yourself a jar of green pesto, a jar of black olives, a couple of chicken b*****s, some pine nuts, some pasta (twists or tubes) and some parmesan.

    Cook the chicken, then chop it.

    Cook the pasta drain it.

    Dry fry (no oil) the pine nuts for a few mintues to toast them a little.

    Grate some parmesan.

    Mix the chicken, pasta, olives and pesto together. Top with pine nuts and parmesan.

    Or..

    Get 500g of mince

    1 tin of chopped tomatoes

    1 tube of tomato puree

    2 garlic cloves

    1 medium onion.

    1 beef oxo cube (1/4 pint of beef stock)

    1 glass of red wine if you have it.

    1 teaspoon of oregano

    1 teaspoon of basil

    Salt and ground black pepper.

    Chop the onion and garlic.

    Fry the beef until brown, at the same time fry the onion and garlic until soft.

    Mix the oxo cube with about 1/4 pints of boiling water

    Drain the beef of the fat, and add the onions, garlic, tinned tomatoes, a good blob of puree (about) a heaped table spoon, beef stock, red wine and herbs together in a pan. Salt and pepper to taste

    Bring to the boil, cover and let simmer until the liquid has more or less gone. (About 20 to 30 mins).

    When nearly cooked cook some pasta and voila a really nice Spag Bol.. don't use the jars the above method is easier, cheaper and doesnt have that plasticy taste of the mass made stuff. Apart from which once you get used to making your own its far superior.

    I learned a lot of cooking from www.ukfood.tv - theres loads of easy recipes on there if you look around and try to decide what you think you can make.

    Don't be too scared, as long as you don't burn stuff or put in too many herbs and spices you're unlikely to go wrong.

  14. ok. first you grab your pizza base, made of squidgy kindness. roll up some stringy hugs to make the crust. squeeze on some smooth, smooth trust, top with a handful of faithfulness and place in the oven for approx. 20-30 mins at 240 degrees. remove from oven, place on plate. add a side dish consisting of lots of happiness and a tad romance and finish with a sprinkle of love. that should do the trick. :] good luck.

  17. well, you could make salmon in the easiest method i know

    get some parchment paper and put it on a sheet pan, place onions and shallots on the bottom as a base, whatever other vegetables you want, and place the salmon on top.  fold the parchment over itself making a little pouch and seal the edges.

    put into a 425 oven for 15 minutes and it should be good

  19. Try him with lasagne made as follows 10min prep time 40mns in the oven.

    Fry good quality minced meat pour off excess fat.

    Add jar of taste the difference bolognesse sauce.

    Pour a little olive oil into dish add a layer pasta sheets

    spread half the minced beef over the pasta

    Spread half a jar of betumel scuce over mince

    another layer of pasta sheets,mince and sauce.

    Top with grated Cheddar cheese and bake for about 40 mins.

    Try it with green salad and a glass of red mmmmm

First, what are your boyfriend's preferences?  That should help you eliminate some possibilities.  Next, search the web, it's full of great recipes.  Think of ethnic foods - does he like chinese?  or italian?  Next, does he like meat based dishes?  Is he a vegetarian?  Then after that think about desert in the same way.

  21. A nice roasted chicken with baby red potatoes and his favorite veggies. If you want to add something nice make biscuits (even if from a can).

    For the chicken, buy a 3 to 5 lber and rub it with olive oil, fresh garlic, sage and rosemary. Let bake until the white little timer pops or until a meat thermometer says its 180 f.

    For the potatoes boil until you can stab with a fork through one, then toss with butter and garlic, salt and pepper

    chop an onion and bung it in

    bit of garlic

    a couple of bay leaves

    add spag bol sauce

    simmer for 1/2 hour

    cook rice serve
