  1. Not knowing how you like to dress your salad or how big it is, I'll give you guidelines:

In a jar with lid, add:

3 parts extra virgin olive oil

    1 part balsamic vinegar

(i.e., 3 tbsp oil and 1 tbsp vinegar)

Add 1/2 tsp dijon mustard (optional but will emulsify the dressing--meaning it won't separate)

    1 tsp liquid honey

    Pepper to season

1 clove garlic peeled and mashed

    Shake well.

Let sit for 10-15 minutes for garlic flavor to infuse then remove clove.

    Add whatever else you'd like.

Sometimes I use vinegar variations like balsamic fig or raspberry.  For the raspberry vinaigrette, replace honey with 1-2 tsp of seedless raspberry jam.

  2. one tablespoon of vinegar, three tablespoons of olive oil, salt pepper and usually a little dijon to hold it all together. Give it a 30 second fork whisk and you should be good to go

  3. Get your salad all together in a bowl...pour desired amounts of both.  There is no right or wrong amount.  Taste your salad, if it needs more of either, add that.  It really is up to the chef's preference.
