  1. Maire is completely wrong!

Honey has antimicrobial and antibacterial properties. Plus, the citrus in the lime will also help keep the tea have a longer shelf life.

Honey is actually the only food known to man that NEVER SPOILS. They have actually found honey in egyptian tombs and is still as edible as honey is today.

  2. Sounds yummy. It should be consumed in a day or so, anyway. I say this because water contains bacteria, and the bacteria grows over time, even in frozen water/ice. Temp just slows the growth, but it doesn't stop it.

So you've got water with bacter in it, and honey will possibly provide a substance to encourage that to grow, and lime will make the water more acidic---and if you've ever left a cup on your desk over the weekend with a little tea or coffee in it, you know that acidic liquids will grow mold, etc.

So even refrigerated, even frozen, there's a limited shelf life for unpasturized water based products.
