Making tomato beef stew- need ideas!

I'm going to make a beef stew in a tomatoey sauce. But I need ideas of stuff to add. Onion soup mix? Do you think potatoes would taste good in it?

  1. Add all your veggies also for a casserole.

I'm going to assume your have stew meat already cut into chunks,  Sear them in a saute pan to just brown.  Transfer to a pot.  Add tomato sauce and bring to a simmer.  Cover and simmer for at least an hour and a half.  Add coarse diced onions and carrots (those vegetables are a must).  You can also add none, any or all of the following (all of them peeled and diced):  potatoes, turnips, parsnips, or rhutabega.  Cook an additional hour.

  3. Potatoes are a must in beef stew, but that's only my opinion. The onion soup mix is a good idea.  And you don't have to sear the meat first if you're making this in a slow cooker.  I make mine in the oven at 325 degrees for about 2 1/2 hours. You could also add a little bit of celery for extra flavor along with the potatoes and carrots. For a thicker gravy, add 1/2 teaspoon flour.  Good luck.
