Seeds mean that the female plant has been pollinated by the male.

This means that the plant will be putting all it's energy into producing seed and not the thc that get's you high.

Basically growers trick the female into thinking she is going to get pollinated, the males are removed preventing this from happening - this is called sensimilla.
