He dropped a shot at par-four 6th, the treacherous hole where he has dropped shots in the past three rounds of the event.
He made the turn with another birdie and carded two more on the back nine to finally land the title with an aggregate of 17-under, 271.
Meanwhile Gallacher, who played well in the third round of the event, carding a three-under, 69 heading into the final round, was not able to sink birdies on the final 18-hole stretch.
He managed to card just two birdies and called it a day with 14-under, 274 on the aggregate, just not good enough to threaten the rampaging Oosthuizen.
Gallacher said, "I'm pleased with myself, only a couple of bogeys throughout the whole week and even threw in a shot which wasn't there".
"It was a phenomenal performance [by Oosthuizen] after last week. I thought he may get tired today and obviously he didn't. Fair play to him, he played great".
He is now looking for his second European Tour victory after his maiden win at Dunhill Links Championship in 2004.
Gallacher had his share of vows on the final day of the event when he signed the wrong card in the morning. Triggering a bad omen for the Scot, the distractions kept mounting throughout the day, forcing him to settle for a sloppy final round.
He added, “I thought I signed it properly. Signed for a 69 when I shot a 68 - I only found out when I was at the first tee. I thought I was tied for the lead, and then was one behind but luckily it didn't affect me that much”.
Despite his loss, Gallacher rightfully admits that he played stunning golf throughout the weekend and is hopeful of utilising his fine form for better results next time.
Winner of the season-opener, Omega Dubai Desert Classic on the European Tour, Rafael Cabrera-Bello finished for a joint third.
He secured the position alongside Englishman Danny Willet and American David Lipsky, posting another strong finish amid high profile players.
Carding an impressive six-under, 66 on the third day, Cabrera-Bello was hoping to reinvent his masterful strokes on the final day to land his second European Tour title but fell for a terrible round replete with bogeys throughout the 18-hole stretch.
