I'm pretty sure they use canola oil, or a vegetable oil  mix containing mostly canola oil.  And, do you want to hear something gross?  A friend of mine that used to work there a while back said they used to use some king of pig fat in addition to the regular oil on the fries to give them a better flavor.  I bet there would be some pretty angry vegetarians out there that unknowingly ate animal products when they thought all they were eating was fries.
