Meal ideas for a working college spouse?

I'm looking for some meal ideas. I'm a full time college student working part time as well. I'm looking for some meal ideas! It gets a little complicated seeing as I am a vegetarian and my boyfriend is a picky meat eater (mother never made him eat his veggies, hes been living off Chef Boyardee and other child favorites since he was about 2!) Anyway, I'm not as concerned about myself as getting some good home cooked meals on the table for my boyfriend.

He loves beef and chicken, anything Italian (spaghetti, pizza and lasagna are his favorites. He hates tomatoes, but loves ketchup and tomato sauces. He doesn't like... well.. any green vegetables (though I could possibly sneak some in if he wouldn't notice. He's a fan of most fruits I believe...

I'm just looking for some new ideas! Anything is a help! :). (and once again me being a vegetarian is no big consideration with meals, I can figure out how to adapt a bowl for me)

  1. 1. A Pot Roast my family loves:

    -cut potatoes length wise and stick at the bottom of a slow cooker (crock pot)

    - throw some baby carrots on top

    -put a chuck roast on top of veggies

    -spread an entire jar of horseraddish on top of meat

    -sprinkle with salt/pepper

    -add some water

    -cook 10 to 12 hours on low, it's ready whenever you are!

    2. Make spaghetti, but add some brown sugar into the sauce and let simmer for awhile

    3. Pizza:

       Buy one of those pre-made pizza crusts at the store

    -put pesto sauce all over it

    -add cooked chicken (cut into bite size pieces)

    - add tomatoes (chopped)

    -add marinated artichokes (buy in a jar, make sure you break up a little)

    - mozzarella cheese

    Cook at 425 for 15 to 20 min

  2. Faux crab cakes-one of our favorites!

    Vegetable oil, for frying

    2 (6-ounce) cans tuna fish

    1 egg, beaten

    2 tablespoons diced green onions

    1/4 cup mayonnaise

    1/2 cup bread crumbs

    Lemon juice, optional Heat 1-inch of oil in a large skillet over medium heat. While oil is heating, combine tuna, beaten egg, green onions, mayonnaise, 1/4 cup bread crumbs, and lemon juice, to taste, if desired. Form into patties and dust with additional bread crumbs. When oil is hot, fry patties until golden brown, about 2 minutes on each side. Remove from oil and drain on paper towels before serving.

    Manicotti

    1 pkg. (8 oz.) sliced mushrooms 2 cloves  garlic, minced 3 egg whites 1 pkg.  (10 oz.) frozen chopped spinach, thawed, well drained

    1 container (15 oz.) part-skim ricotta cheese

    1 cup  KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese, divided 1/3 cup KRAFT 100% Grated Parmesan Cheese,

    divided 1 pkg.  (8 oz.) manicotti shells (14 shells), cooked, drained

    2 cups spaghetti sauce

    PREHEAT oven to 350°F. Spray large nonstick skillet with cooking spray. Add mushrooms and garlic; cook 5 min. on medium heat, stirring frequently. Remove from heat.

    Beat egg whites lightly in medium bowl. Add mushroom mixture, spinach, ricotta cheese and half each of the mozzarella and Parmesan cheeses; mix well.

    Spoon evenly into manicotti shells. PLACE in 13x9-inch baking dish sprayed with cooking spray. Cover with spaghetti sauce.

    BAKE 40 min. or until heated through.

    Top with the remaining mozzarella and Parmesan cheeses; continue baking 5 min. or until mozzarella cheese is melted


  3. You can add beef or chicken to any pastas also any sauces, like marinara,or alfredo or even a pesto.  Taco salad, meat with his non for you, pinto beans are a great sub or addition to taco salads.Hamburgers and veggie burgers.  Omelettes are great for dinner too.  

  4. My kids are picky eaters too and if they can see a vegetable they will not eat it. The way to sneak in vegetables is to mince it really well before adding it in. I bought a food processor and that makes food prep easier. If he likes lasagne, try adding spinach, onions, carrots and celery to the sauce. If they are small enough they just blend in and give it a great flavor.

    This method works for almost every recipe. He will never know what he is eating unless you tell him. :o) Good Luck!!

This is one of my favorite weeknight dinners.  Get a box of Zatarains black beans and rice.  Make that with a bit less liquid than called for.  Put it in a tortilla with cheese, roll up and serve with sour cream and green salsa.  You can slice up a link of sausage and fry it and add it to his portion.  Sometimes I either make enchilada sauce or use a jar and turn them into, well, baked enchiladas.  This whole thing works well with the red beans and rice mix too.
