Meatloaf still pink at 165 degrees?

I own a restaurant and the past 3 months or so our meatloaf is pink inside no matter how high the internal temp. we havent change suppliers or the basic recipe

  1. The color of the meat is not an indicator of doneness...so just keep using the thermometer and make sure the internal temperature is 165, and it should be ok. Make sure you calibrate your thermometer, too, to make sure that it is giving you an accurate reading. If in doubt, throw it out and get a new thermometer.
