  1. I know that many of my colleagues in Grad School went on to good careers in Medical Anthro/Public Health fields.  The school had a very good progarm - including internships with the State Health Department, etc.  I would suggest checking into schools like this where the staff and current students can probably give you a lot of insight.

  2. In addition to the above response, check out books such as "The Spirit Catches You and You Fall Down" (Fadiman) as well as books and research by Arthur Kleinman, a psychiatrist interested in other cultures.  I am not an anthropologist, but find (found) the above absolutely fascinating.

  3. Medical anthro is great! It's one of the areas in anthro in which PhDs can really enjoy non-academic job success. There are tons of wonderful grad programs that specialize in it and some of them allow you to do joint PhDs/MPHs which is nice.

Here's a link to the Society for Medical Anthropology, which is a section of the American Anthropological Association:

They have tons of great info on med anthro and links to grad programs, their journal (Medical Anthropology Quarterly), etc.
