  1. BAKED CHAYOTES

    2 lbs. chayotes

    Butter

    1/2 lb. cooked ham, chopped

    1 c. whipping cream

    1/2 lb. jack cheese, grated

    Salt and pepper to taste

Cook chayotes in boiling water until tender, about 45 minutes to 1 hour depending on size. Peel and cut in half and discard seeds. Cut in slices. Grease a casserole with butter and arrange alternate layers of chayotes and ham, salt and pepper, cream and cheese and ending with cheese. Dot with butter. Bake uncovered at 375 degrees until browned.

Mel iton is how we pronounce it,

  2. Depends where you live. Some call it a Merliton. Some call it a mellow-tone and out West, it's called a chayote.
