Melted ice cream - a restraurant trick for ???

I heard Emeril say as a quick trick - restaurants use melted ice cream for this but I didn't hear what for ... anyone know ?

  1. Not sure about Emeril's uses...but I have used melted ice cream as a sauce over cake when I didn't have frosting/frosting ingredients.


  2. Hi, I am not sure about the Emeril quick trick, but I do know melted vanilla ice cream can be used when making your own carmel rolls.



    You can make your own dough, or use frozen bread dough, thawed.

    Form your rolls, or just pick off bits and place in greased pan, 13x9 or a bundt pan. Sprinkle with cinnamon if desired. Let raise. When you are ready to bake em top with a mixture of 1 cup each of brown sugar, butter and your melted ice cream. Bake for about 35 minutes.

    Then Enjoy!  The ice cream keeps the carmel so soft.

    I starred your question so I hope to find out Emeril's "quick trick" also.

  3. didn't hear or watch the show... but my guess would be Creme Anglaise which is essentially a custard sauce that's poured over desserts.

  4. Many dessert makers will melt down ice cream and serve it in place of crème Anglaise when pressed for time.
