Menu Ideas for Fantasy Football Draft?

Hi,

I need some opinions on a menu for my fantasy league draft. I was either going to go with BBQing(only downside is I live in a townhouse so grill is downstairs...living area upstairs so kinda inconvenient) or I can make lots of appetizers for people to pick on, what do you think? All opinions welcome! : )

  1. I think a bunch of appetizers would be nice. Just make sure you have some hearty ones. Maybe a fruit and cheese platter, shrimp with cocktail sauce, a sub platter from Publix, etc.


  2. I don't have a lot of ideas, but a fantasy football draft party is super cool!

    A huge fruit salad in a watermelon shell is always a big hit, taco dips are always filling and easy.

  3. Yeah, I'd skip the grilling, too, unless you can do it before your guests arrive

    Bacon-Wrapped Shrimp

    8 large shrimp, shelled and deveined, tail on

    4 slices bacon, cut in halves

    Spicy Orange Sauce:

    3 Tbsp. orange marmalade

    1 hot chile pepper, seeded and chopped

    2 green onions, chopped (both white & green parts)

    2 Tbsp. chopped fresh cilantro

    2 Tbsp. EVOO

    Slat & Pepper to taste

    1. Preheat the broiler.

    2. Combine all sauce ingredients in a small bowl, whisking well.

    3. Wrap each shrimp in a slice of bacon and secure w/ toothpick.

    4. Place shrimp on broiler pan, and broil 2-3 minutes on each side, turning once, until bacon is crisp and shrimp is opaque.

    5. Arrange shrimp on a platter and serve immediately with sauce.

    MAKE-AHEAD BACON-CHEDDAR STUFFED MUSHROOMS

    6 slices bacon

    16 large cremini mushrooms

    2 tablespoons butter

    2 tablespoons chopped onion

    1½ cups shredded cheddar cheese

    1.  Preheat oven to 400ºF. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown.  Drain, dice and set aside.

    2.  Remove mushroom stems and chop.  Wipe caps with damp paper towel to clean; set aside caps.

    3.  In a large saucepan over medium heat, melt the butter.  Slowly cook and stir the chopped mushroom stems and onion until the onion is soft. Remove from heat.

    4.  In a medium bowl, stir together the mushroom stem mixture, bacon and 1 cup Cheddar. Mix well and scoop the mixture into the mushroom caps.

    5.  Bake in the preheated oven 15 minutes; remove the mushrooms from the oven, and sprinkle with the remaining cheese.  If desired, you can bake 2-3 minutes more to melt cheese.  

    To freeze: wrap baking dish tightly and freeze them before baking in the oven.  A freezer bag would work great for storing these once they are frozen.  Let defrost and then bake as directed above.

    Pepperoni Bites

    1 cup shredded mozzarella cheese

    ½ cup chopped pepperoni

    ½ cup pizza sauce

    2 packages (10 each) refrigerated biscuits

    1 Tbsp. milk

    ¼ c grated parmesan cheese

    For filling, in a bowl combine mozzarella cheese, pepperoni and pizza sauce. Set aside. Separate biscuits to 3 inch circles. Place about 1 rounded tablespoon filling in the center of each circle. Bring edges of dough together and pinch to seal. Place on greased baking sheet, brush with milk. Sprinkle with parmesan cheese. Bake at 350 for 12-15 minutes or until golden.

  4. Go to Sams and they have frozen appetizers that would be great at your party.  Depending on how many people are going to be there. Go to the nearest sub shop and get them to make you a 6ft.sub. and then cut it in as many pieaces as your need.  Thats different and it tastes great!!
