As you grow beyond a couple of units, you really need to tap expertise because you are going to run into consistency issues, operational issues, and you are not going to be getting the volume cost savings that you should have.   There are a bunch of good people out there that are very affordable on a part time, limited consulting basis (I am not one of them).   If you need some help locating someone or with good recommendations, please let me know.
