Menu cycle suggestions?

currently compiling a menu cycle for large volume catering in a secure hospital

i need 28 different vegetarian/healthy eating dishes to fit into this

not looking for recipies, just ideas for unusual dishes to augment our current framework

  1. -Quinoa with sauteed vegetables

    -Veggie tacos/burritos w/ wheat tortillas

    -Baked sweet potatoes with tossed salad

    -Veggie burgers and french fries

    -Vegetable soup and veggie sandwiches (like lettuce, tomato, cucumber, hummus, onion, artichoke hearts and provolone on whole-grain bread)

    -Vegetarian sloppy joes (using crumbles)

    -Veggie stir fry with brown rice


  2. GREEK SALAD

    1 sliced, cubed cucumber

    2-3 cut up fresh tomatoes

    1/4 cut up onion

    1/2 - 1 c pitted kalamata olives

    1 small container feta cheese

    Toss with bottled Greek Salad dressing ...... can also add cooked spiral pasta for Greek Pasta Salad

    TACO SALAD

    1 shredded iceberg lettuce

    1 can pinto or chili beans, drained

    1 small jar salsa (or 1-2 c. homemade)

    8 oz. shredded cheddar cheese

    3-4 cut up fresh tomatoes

    1/4 cut up onion

    chopped fresh cilantro

    (black olives and/or sliced avocado - OPTIONAL)

    3-4 handfuls crunched up tortilla chips

    TOSS and serve

  3. Rat-tat-toooy!!!!! Dirty rice-omit the meat and bump up the veg. Eggplant steaks. veg kebobs.portobella burgers! Don't know if you already have any of those in current rotation.

    Lentil curry with rice

    Vegetarian Chilli (supplement the meat with green or brown lentils)

    Vegetable lasagne

    Quiche or Cheese Flan

    Nut burgers

    Broad Bean and Green Bean Rissotto

    Pasta with chopped spinach and Pine nuts or Walnuts

    Deep Fryed Veg with spicy tomato sauce.

    2 gallons prepared TVP

    8 onions, chopped

    8 red bell pepper, chopped

    48oz (six cups) can tomato paste

    8 cups water

    2 cups heinz ketchup

    24 cloves garlic, minced

    1/2c chili powder

    1/4c paprika

    1/4c  dried mustard

    1/4 teaspoon distilled white vinegar

    1 c brown sugar

    1/4c salt

    1/4c ground black pepper

    64 Burger Buns

    That or a Google search in general tells you how to mix up the mix part of sloppy joes.

    I've made this quite delicious dish with couscous, zucchini, raisins, slivered almonds (it actually calls for pine nuts but you can't find them around here), cumin seed, extra virgin olive oil. garbanzo beans, green olives, and some other spices.  Sadly I cannot find the recipe book right now but I did try and find the exact recipe.  This one is similar but with fewer ingredients but you could modify where necessary.  http://www.cooks.com/rec/doc/0,1850,1481...

I recently came home from spending a month in the hospital, I can tell you that the meals were sorely lacking in fresh veggies and fruits.  When I asked for fresh fruit I was always given a small apple, sometimes maybe orange pieces in a strange-tasting syrup.  Anyhow, for your menu hopefully you're considering a variety of salads.  Maybe also a spinach quiche or Florentine crepes.  If you need other vegetarian ideas how about a lentil or bean soup, felafel wraps with hummus and tabouli, Veggie burgers, black bean chili, ,mushroom ravioli, pesto tortellini.  If you want something more unusual check out the menus at your local Mediterranean or Lebanese restaurants.
