  2. Artichoke Dip

    8 oz. block cream cheese

    8 oz. grated parmesan cheese

    8 oz. mayo

    8 oz. artichoke hearts, chopped

Mix together well and bake at 350 degrees fro 45 minutes.

    Feta Bruschetta

¼ c. butter or margarine melted

¼ c. olive oil or vegetable oil

10 slices French bread (1 inch thick)

1 pkg. (4 oz.) crumbled feta cheese

    2-3 garlic cloves, minced

1 T. minced fresh basil or 1 t. minced fresh basil

1 large tomato, seeded and chopped

In a bowl, combine butter and oil; brush onto both sides of bread. Place on a baking sheet. Bake at 350 degrees for 8-10 minutes or until lightly browned on top. Combine the feta cheese, garlic and basil, sprinkle over toast. Top with tomato. Bake 8-10 minutes or until heated through. Serve warm.

I also low fresh pasta salad:

boil entire box of pasta of choice (I like spiral)

Chop fresh tomatoes, peppers, carrots, celery, cucumber and other yummy veggies to taste. Toss with cooked pasta that has cooled slightly and mix in italian dressing. Refrigerate and serve cold.

Flank steak is an excellent cut of meat to marinate and grill and will go very quickly.

For desert, I would serve a combination of mix fruit salad and pie.

    Hope that helps
