  1. I like to use a can of white albacore tuna (you can use any kind of light tasting fish).  Lime juice to taste  Onion, green pepper, a little OLD BAY Seasoning and sprinkle of sea salt.

Some like to use tomatoe paste or tomatoes.  I hate both.  Try also calamari or salmon.

  2. Is this not the shrimps and fresh white fish that is 'cooked' by marinating in a citric juice?

There is a PBS show about this American dude who lives in Mexico and makes all sorts of wonderful Mexican dishes.  He made the Ceviche on one show.  Looked good, but I've never had any.

  3. Where I live in Veracruz, they use red snapper, and diced onion, tomatoes and some coriander, obviously you can add some chilli or some other vegetable you like, all mixed in a bowl and then add plenty of lime juice until the fish is "cooked" because of the citric acid. Usually takes a few hours in the fridge. Its served with salted crackers. Its excellent in a really hot day with some beer!

  4. Shrimp ceviche recipe is here: http://www.elise.com/recipes/archives/00...

Red Snapper ceviche (I believe this is the more traditional one): http://www.elise.com/recipes/archives/00...
