Got this recipe outta an old recipe book from like the 70's - an old faithful ;)

MEXICAN CORN BREAD:

1 cup stoneground whole wheat flour

1 cup stoneground yellow corn meal

4 tsp baking powder

1/2 tsp sea salt

1/2 tsp chilli pdr

1/4 cup non-instant dry milk solids

1/4 cup honey

2 eggs, lightly beaten

1/2 cup oil

1/2 cup milk

1/4 cup finely chopped onion

2 tabs chopped pimento

1/4 cup diced green pepper

2 tabs chopped jalapen chili peppers

1. Preheat oven 425 degrees F

2. In a bowl, combine the flour, corn meal, baking powder, salt, chili powder and powdered milk.

3. Add remaining ing. and mix just enough to moisten

4. Turn into an oiled 8 inch square baking pan and bake about 20mins or until done.

Yield: Six servings
