What are the different job positions and hoe do I make a employee work schedule that calculates the payroll based on sales forecast?

Usually you can't do this. That is why the owner has to work behind the counter and clean tables.  Otherwise you lose money due to payroll costs.  

The jobs are busboy, cash register, hostess, waiter, cook, dishwasher.  That is too many to hire on Day 1.  WHich means the owner will be doing 2 of them.
