1st.- Will you make the payroll variable as opposed to fixed? I think it will be pretty hard to convince your employees about that.

2.- An employee work schedule cannot calculate anything. Based on the sales forecast, you can calculate the number of employees needed, and the work schedule each employee will have. But for this you must know when are the peak hours at your restaurant, this will be the time you need more employees; whence program each employees schedule.

3.- Look up a business plan this will help you a lot.
