Mexican food serving customs?

I'm doing a report on Mexican cusine, and I want to know what sort of serving customs they have. Unfortunately, typing this into google keeps giving me irrelevant data. Does someone have this information for me, and could they cite the source? Thank you very much!

  1. if u mean what kindda service mexicans use (american, french, engish, russian, etc) then i can tell u:

    at home: american, english

    restaurants: american, french

    industrial dinning rooms: english, buffet

    formal diners: american, english, russian, french

  2. 1st course is "entradas" or appetizers. It could be cheese, sausages, fried pigskin...

    2nd course is soup, rice or pasta. The Spanish word for soup is sopa and you will hear Mexicans calling rice and pasta sopa.

    at this point there might be a salad, but Mexicans are not by tradition vegetable eaters; having the philosophy that to eat well one must eat meat.

    main course- some kind of animal flesh. it could be chicken, pork, beef, mutton, goat, turkey, rabbit, fish, mariscos(any other seafood), etc.

    followed by dessert which is traditionally a gelatin, congealed fruit with a slice of cheese, candied or fresh fruit with cream or arróz con leche which is rice boiled in milk with lots of sugar and cinnamon sticks. Dessert could also be a pie or cake or pudding and may or may not include coffee. Desserts, even those which obviously require a fork, are most often eaten with a spoon.

    It is customary for men to be served first becuase it is usually the women in the family who do the serving. Many if not most families employ servants. If the servant's duties include serving dinner it is also customary for the head of household to be served first. If there are guests the male guests are served first. In restaurants the wait staff are for the most part catching on to the idea of serving the women first.

    A properly set table should be set just as in the USA, but a great number of Mexicans set table haphazardly. People here cut with the knife in the right hand then switch the fork to the right hand. Unless tacos/tostadas/quesadillas/sincronozadas... and other such foods are served. These foods are served on or wrapped in a tortilla and are commonly held in the hand for consumption.

    In smaller towns and villages mole (turkey,chicken or some other meat in a thick sauce) is commonly eaten using only a tortilla and the help of a spoon.

  3. Typical home, everyday meals (in Mexico City and central Mexico)

    Breakfast (if we have time to have any):

    Orange juice, eggs any style (or cereal), coffee, bread.

    Lunch (main meal, eaten any time between 1:30 and 3:30 PM):

    Soup, a small portion of rice or pasta (no red sauce, only cream sauce or butter), main course of meat, chicken or fish with veggies or salad, small desert, drinks made of fruit (agua de fruta) or soda (refresco). White bread or tortillas.

    Dinner:

    That varies a lot, it can go from a serving of bread and coffee, to a larger meal, tacos, tortas (sandwiches), quesadillas...depending on the household. Dinner is not the main meal of the day.

    Dishware, glassware and cuttlery are informal at home. Almost evey familly that can afford it has a "good" set for special occasions.
