Question:

Mexican pasta salad?

my husbands mom makes this pasta salad.. they call it "sopa" but I know she makes it with elbow noodles, ham, sour cream, chicken broth (i think) and some other stuff... all i know that it looks like some white sauce on it.. any one have any idea what it could be and how to make it?

i've asked his mom, but she doesn't really explain it good enough.. she doesn't use measurements..

  1. most hispanics dont bother

    with measurements

    sopa means soup

    and is it in a broth

    or something

    most salads are different and u ll never be able to find the same thing


  2. MEXICAN PASTA SALAD  

    2 (10 oz.) cans diced Rotel tomatoes

    4 1/2 c. (12 oz.) garden spirals pasta, uncooked

    1 1/2 c. (12 oz.) cubed mild Mexican Velveeta cheese

    1 1/2 c. (15 1/2 oz. can) red kidney beans, drained

    1 c. sliced green pepper

    1/2 c. sliced black olives

    1/2 c. diced onion

    3 or 4 sliced green onions

    Strain tomatoes, reserving liquid. Cook pasta according to package directions; drain well. In large microwave-safe bowl, combine 2 tablespoons reserved liquid with cheese. Microwave at HIGH (100 %) 2-3 minutes, stirring occasionally, until cheese melts and mixture is smooth.

    Gradually blend in 1/3 cup reserved liquid. Add pasta, tomatoes, and remaining ingredients; toss. Cover and chill, stirring occasionally. Serve on lettuce, if desired. Makes 6 to 8 servings.

    If you like it hotter, use the hot Mexican Velveeta.



    OR

    MEXICAN PASTA SALAD  

    1 bag tri-colored rotini, cooked and drained

    1 med. onion, diced

    2 lg. tomatoes, diced

    1 med. green pepper, diced

    1 box frozen chopped broccoli, thawed

    1 sm. can black olives, sliced

    Mix all ingredients with pasta.

    DRESSING:

    1 c. vegetable oil

    1/2 c. cider vinegar

    3 tbsp. lemon juice

    2 tbsp. sugar

    1 tbsp. Tabasco sauce

    2 tbsp. chili powder

    Salt and pepper to taste

    Mix with pasta and chill.

    OR

    MEXICAN PASTA SALAD  

    2 (14 1/2 oz. each) cans Del Monte Mexican style stewed tomatoes

    4 1/2 c. lg. Shel-Roni, uncooked (12 oz.)

    1 1/2 c. Velveeta cheese, Mexican style with jalapeno pepper, cubed (12 oz.)

    1 1/2 c. red kidney beans, drained (15 oz. can)

    1 c. sliced green pepper

    1/3 c. sliced black olives

    1/3 c. sliced green onion

    Strain tomatoes, reserving liquid; chop tomatoes into pieces. Cook macaroni according to package directions; drain. Rinse with cold water to cool quickly; drain well. In large microwave-safe bowl combine 2 tablespoons reserved liquid with cheese. Microwave at high 2-3 minutes, stirring occasionally, until cheese melts and mixture is smooth. Gradually blend in 1/3 cup reserved liquid. Add macaroni, tomatoes, and remaining ingredients; toss. Cover and chill, stirring occasionally.

  3. Sopa means soup. And if I search for sopa, there is a lot of return. if I search for salad, it will not come up as you describe. It would help if we know the full name like, Sopa de......

  4. Sopa is also referred to as noodles, and the pasta salads I  have had includes ham, noodles, cheese, mayo or sour cream but the Latin Sour Cream (Crema), and seasonings. You don't need to measure just make the noodles and add the ham and cheese, onions, tomatoes, and whatever else you want and stir in little dabs of the mayo or crema until you reach the desired consistency.
