Mexican rice is hard?

I am cooking mexican rice and after 30 minutes is hard and most of the liquid is gone. Does anyone have suggestions on how I can save it?

  1. Its Not Just Mexican Rice.

    Its Probably The Age Of The Rice.

    Just Add More Water And Cover It For Ten Minutes.

    Boiling Water First Might Off Help.


  2. Are you trying to cook a mexican recipe or plain rice you bought in Mexico?

    In Mexico there are diferent types of rice, the regular, the "impegable" (non sticky) and the perboiled (which is mostly like the rice you buy in the us) The regular does take a little more tyme and two water cups per rice cup

  4. Try adding more liquid and boiling it another 5 minutes.

  5. 2 cups water to 1 cup rice is about right.  Don't know how you did it but if you boil it long enough, in enough water, it will eventually cook to the soft stage.

  7. Without knowing what you did, it's hard to guess what went wrong, but you probably can't save this batch.

    Find a recipe and follow it EXACTLY. Measure everything. Rice is actually pretty temperamental to cook.  If you are doing it on the stove top, do not lift the lid to peak and make sure the burner is at the absolute lowest setting after you add the rice and bring it back to a boil.  A heavy pot with a tight-fitting lid is a must.  

    30 minutes is a long time to cook rice, which makes me think you might be baking it?  If so, you probably did not measure the ratio of liquid to rice accurately, or your cover is not tight enough, or your oven is too hot.

    Rice cooks by steaming.  It's important for the steam to be locked in with the rice and not allowed to escape.

    double the amount of water as rice bring to a boil and let simmer COVERED for about 30-45 minutes.

    Do not lift the cover do not "check" the rice.

    After the steamed white rice is done then you can add whatever you'd like to it!!

    Spanish Rice: seasonings tomatoes peppers maybe a bit of meat

    Fried Rice:Egg pees carrots egg maybe some chicken or shrimp

    Bacon fat can always spice up a nice rice dish.

    Once you have messed up the rice though there is no hope in saving it. If you do manage to get it soft it will be too starchy. Just start over and make sure your rice is done before you spice it up :)

  9. Add some chicken broth...slowly and cover...try to fold the rice and not stir too much....great luck to you!!

  10. keep adding hot water til it softens... then add the mix... good luck...

  11. Add about a half-cup some more boiling water (nuke iit in m/w oven), put lid on (NO PEEKING!), and let sit over low to med-low heat for about 10-13 minutes.  (Lifting the lid and messing w/ it is why you have hard rice now, so keep out!)
