Mexican rice pudding recipe?

ok i've looked at many rice pudding recipes and they say add zest of a lemon

now my question is why would u add zest of a lemon? to change flavor or wat? what does zest of a lemon do for the pudding?

  1. It has become very popular to add citrus peel ,zested to many dishes, in Asian and a lot of salads. It adds zest to the dish.


  2. In some dishes the lemon zest enhances the other flavors, and in others it adds a flavor.  

    I have made rice pudding and never added lemon zest - but it depends on the version you are making.

    My abuelita's recipe, she adds cinnamon and raisins.  But my friends don't use cinnamon, they add coconut.

    Find a recipe you are happy with, and if you prefer not to add the lemon, skip it this time, and next time try adding it to see how you prefer it.

  3. I don't add any lemon zest to mine heres my recipe I like it with a few raisins too sometimes

    Arroz con Leche

    4 cups milk

    1 cup rice

    1 cup sugar

    1 tsp vanilla

    1 cup heavy cream

    1/4 tsp salt

    In medium saucepan, heat milk over medium-high heat, until scalded but not burned. Pour rice into 9 x 14 inch pan. Cover with scalded milk, and bake at 325 degrees for 3 hours, or until the rice is soft, but not dry. Stir occasionally during first hour to prevent sticking. If necessary, add more scalded milk. After 2 hours, 45 minutes remove from oven. Add vanilla, sugar, and cream. Return to oven to finish baking for 15 minutes. Serve hot.
