Mexican sour cream?

I have ben looking for a sour cream recipe from the frugal gourmet (Jeff smith cooks mexican) I was wondering if any one would have it...

  1. Most Wal-Marts now have mexican cream in the refridgerated section.  I guess it depends on the area you live in, we are in a heavily populated Hispanic community.  But I have seen it at other Wal-Marts.  You could try there if you do not want to make your own.


  2. MEXICAN SOUR CREAM ENCHILADAS  

    1 c. sour cream

    2 cans cream of chicken soup

    1/2 c. salsa

    1/4 c. green chilies, diced

    1 c. cheddar cheese, diced

    1 c. cooked chicken, diced

    1/2 c. green onions, diced

    1 doz. med. sized flour or corn tortillas

    Combine first 4 ingredients, mixing until smooth. Mix in cheese, chicken and onions. Add 1 heaping tablespoon filling sauce mixture on a tortilla and roll up. Place side by side in baking pan. Pour and spread remaining sauce over enchiladas. Serve with more salsa. Bake at 325 degrees for 30 minutes. Serves 8 to 10.

  3. To my knowledge creama is the same as sour cream just thinner, I just use my sour cream regular but Ive been told you just thin it out with water and lime  whisk it together but I could be wrong. I know you can but creama next to the Mexican cheeses in my walmart and local grocery stores

  4. I just use double cream and sour it with fresh lemon juice and whip to a semi - whip.

  5. This may not be the Frugal Gourmet's recipe, but once I had Mexican Crema on my chili rellenos in Mexico, I was hooked, and have not used sour cream on my Mexican food since.

    You can make crema by simply adding about two teaspoons of buttermilk to one cup of heavy cream and heating it to just about 100°. Remove from the heat and let stand in a warm spot overnight. When it has thickened slightly, stir gently and refrigerate until thoroughly chilled and completely thickened. You can also look for crema in Latin markets. It will be in little plastic bottles labeled Crema Salvadorena, Crema Tipo Centroamericana and Crema Criolla. They differ in taste and quality, so try a few to find the one you like best.
