Michelin star restaurant Sydney?

Hi.

I really want to work in a restaurant or hotel restaurant in sydney i have all the qualifications neccesary to work in these places i am from London so i don't really know about the restaurant scene in sydney what i want to know is who is the top chef out there at the moment and what michelin star restaurants are there? also what is the number one hotel like claridges or the ritz, those sort of places.

Hi beanie, as far as I know there are no Michelin starred restaurants outside Europe apart from Tokyo and some  restaurants in some bigger cities in the US like New York and Las Vegas.  Having said that there are several very good restaurants in Sydney but I have to warn you, you will find the  service standards very different here in Aus to what you are used to in London. Not saying that the service is bad but it is a lot more laid back and not nearly as formal.  I  am silver service and gueridon trained and I'm finding that my skills are less and less in demand as for the most part Australians just don't seem to want that level of service any more.Now that may be EXACTLY what you're looking for but the European and British waiters that I have worked with in Sydney restaurants  have found the novelty of a more laid back style of service  wears off very quickly. Hotels I would suggest you get in touch with are;(fine dining restaurants in each are in the  brackets)

    - the Observatory (Galileo Restaurant)

    - the newly refurbished Hilton (The Glass Brasserie: the Head chef here is Luke Mangan a top Australian Chef)

    -Four Seasons (Kable's)

    Another option you might like to consider are the executive clubs in the city's 5 star hotels. I used to work at one and someone with your experience would be grabbed with both hands :)

    The Sydney Morning Herald Good Food Guide (for Sydney)  and The Age (Melbourne) are the best sources for finding restaurants. You may need to do a bit of research to find them on the net (I did some but it was taking a while, sorry. Normally we buy them at a newsagents. But they sell out quick, so don't delay).     I don't think we have any Michelin star restaurants here unfortunately. Perhaps you could help us to achieve that status. Good luck.
