There are 2 types of microorganisms to be concerned about, yeast and bacteria.  Yeast the the stuff that makes bread rise and become fluffy.  It also turns the sugars in fruit to alcohol.  Airborne wild yeasts will cause other reactions that could produce things like acetone and methanol or other harmful things.  Make sure that you are only using wine-making yeast and protect the process from outside air.  The other thing to worry about is bacteria.  These breed and generate sulfur containing compounds that will make things taste bad and could even make you sick.  Make sure everyting is properly cleaned and sterile before starting any wine making.
