Mold on my grana padano. Is it still safe to eat if i cut off the mold?

It's small circle shaped blue green mold in two places. Also, the grana padano was left out for about 8 hours on two separate dates. still safe to eat??

  1. try to cut off the mold and wait for tomorrow before eating it... if the mold returns, just throw it away...

    ps: good grana padano shouldn't make mold.


  2. Well, to bad you didn't catch it earlier.

    It's safe but the taste of the mold( rancidity) probably went through the cheese already.

    Do this:

    Cut off all the sides and the rind and smell it for rancidity( you'll know).

    But make sure the rind is off because the rind may make the cheese smell rancid and get all the mold off the cheese( you may have to take off quite a bit).

    Then taste it ( it will not hurt you).

    The mold starts as brown salty looking spots( that's when you have to catch it).

    What you have there is a very young piece of Grana( not aged long enough).

    It has to much moisture which caused it to mold quickly.

    Of course refrigeration helps maintain it longer.

    Next time opt for a Reggiano that's aged longer( 3 years is very good).

    Always select pieces with the least amount of rind and look for an even straw colouring with no dark spots. Golden coloured and even all around.

    So, 2 spots, you should be able to salvage most of it.
