Question:

More biryani questions?

I know, I have more questions about biryani! I made it with chicken once, but this time I am making the vegetarian version.

I have been watching Chef Vah who is awesome, here is his vegetarian biryani: http://www.youtube.com/watch?v=GridojtCXDE

Here are a few concerns I have:

1. How do you know the rice is 50% cooked? How can I gauge this with a rice cooker? I am considering using the drain method that Chef Vah explained instead of the rice cooker, but the rice cooker is so much more convenient!

2. Also, how do I know the vegetables are 50% done?

Of course the reason I am asking about the 50% is because I do not want to overcook anything and would love for the veges to stay crisp when done.

Some hints would be appreciated. Thanks.

  1. Biryani comes best when cooked with Mutton , because spice can set best with that meat. With chicken it is not as delicious and vegetable made briyani is pulao not briyani


  2. Hi!

    I think 50% cooked means they are not totally cooked. i mean if its rice, and you try to break it with your fingers it will break easily but will not be too soft.. you can feel it a little crunchy. Same goes for veggies.

    If you want to rice cooker, you'll know how much time is required to cook rice fully. Just take it out when half of the time is over.

    I many times follow the recipes by Vah Chef too :)

    I use rice cooker to half-cook too.. Usually i have to wait for 2 whistles when cooking rice in my pressure cooker, for half boiled, i take it out after just 1 whistle.
