Question:

More juice for strawberry shortcake?

I'm making strawberry shortcake for 20 people! Seven pounds of strawberries has yielded only a small amount of juice. I cut and sugared them last night, and added lemon juice. The strawberries are beautiful. They are from California, and I'm in Michigan. I suspect they were harvested early, and just don't have much juice in them.

Can you think of any way to get more juice? I'm thinking of adding a little strawberry jello and water, but I sure don't want to ruin 7 pounds of strawberries. What do you think??

  1. Usually sugaring them will produce the juice.  I wouldn't add jello to them though .... Why not get some frozen strawberries and puree them in your blender?  Keep the extras for smoothies or to use as ice cubes in lemonade later......

I am pretty sure they sell strawberry juice in the juice aisle of the grocery store.  You might be better off with a small amount of something like that than with experimenting with jello.  The jello might not have the right consistency, especially if it doesn't dissolve, or worse- if it hardens!

  3. th ejello is probably not the right thing to do.

    you might try your grocery store and look for strawberry syrup, like you would put on a sunday, most of those have lots of juice to them and include strawberries as well.

    another option would be to add a bit of water to your strawberries, that would increase your volume of strawberry liquid.

    lastly, take a portion of the strawberries and mash them up, this does two things, it creates more juices, and actually increases the volume of strawberries that you have. you can then mix the whole. sliced strawberries with the smaller mashed bits and increase your amount of "liquid"

  4. You can add some actual juice available at the grocers or I would opt for some pureed frozen strawberries. They will add juice and some body to the result.
