    The core of galaxies (at least, the spiral ones) are very active with the constant births and deaths of thousands of stars.

    The core of the Milky Way, and other galaxies like it, is a massive black hole.  This is why the center of the galaxy is so bright; it is densely packed with matter, mostly stars.
