Moving fluids in plants (Celery--Salt)?

did this bio lab, where I put a celery in a cup of water along with food colouring and comapred it to celery with food colouring and salt.

I REALLY need the second question answered, I already finished the first one, but that's just there so you know what I'm talking about.

How does water travel through plant stems? Can we detemine how a chosen factor(salt, sugar, temp., etc.) influences the rate of water movement through plant stems?

If you're using a website, a reference would be nice :)

  2. 2.Water is attracted to the walls of the plant’s vein.  As the water moves up the stem, the pressure falls slightly below the water's surface.  Atmospheric pressure then pushes the water upward from the bottom of the plant to make up the pressure difference.  The higher the surface tensions of the liquid (water in this case) and the smaller the diameter of the capillary (the plant's vein) the higher the liquid will rise.

    Concentration of substances that have an effect on surface tension will affect capillarity

  4. xylem are present in most plant. Xylem take nutrients and water from stems to upper parts. in some plant water flow through cell to cell transmission.
