Moving fluids in plants (celery)?

I did this biology lab where I compared celery in water and food colouring to celery in water, food colouring AND salt.

I was just wondering:

how are the water carrying tissues in celery diferent from those that do not carry water?

  1. The xylem carries water with food coloring to the rest of the plant.

    It moves by capillary action .

    The phloem carries the food to the rest of the plant.
