I move in with two vegetarian girls in September for my final year at university in Edinburgh. I will just about eat anything but I would like ideas for filling veggie meals as I have a big apatite. Obviously this has to be done on a budget since we all study…

    Potato Burgers

    Form leftover mashed potatoes into patties. Dip into beaten egg & then into breadcrumbs. Let sit in fridge for one hour. Fry in a bit of oil until brown on both sides & serve immediately.

    Always end up falling apart. (i'm not sure what I've done wrong) I serve between 2 slices of bread & TONS of egg salad spread.

    Egg Salad spread

    Mix a crumbled hard cooked egg w/1 TB of mayo & a TB of any or all of the following: diced cleery or onion, parsley, tofu & mashed beans.

  3. Stir fries are great!  You can cook rice while you stir fry the veggies.  They can stir-fry tofu on separate skillet while you stir-fry chicken, beef or even a bit of fish!

  4. First find out what type of vegetarians they are...

    Do they eat cheese, eggs?

    Are they vegans? which means no animal products at all.

    Or are they the self-proclaimed "vegetarians" that still eat fish and chicken, but no red meat.

    Also, shouldn't your budget be independent of their eating habits?

  6. Here is a cheap, easy veggie meal:

    Slice carrots, peppers, onions & tomatoes (or other veggies you like) & cook all in olive oil & garlic (except for tomatoes!!!)

    Make sure you cook on medium/low heat & just until veggies are tender.

    Meanwhile, boil water for pasta, I use rigatoni, but sometimes angel hair, linguini, etc.

    After pasta is cooked, drain it & toss veggies including tomatoes with it. You might have to add more olive oil too.

    Add salt & pepper, oregano & basil, plus either grated parmesan or romano cheese. Mix well & serve hot!!

    YUMMY!
