The win helped the Merseyside outfit retain their fourth place in the league standings. They now have 20 points from their 11 matches and trail leaders, Manchester United by a margin of seven points.
The 49-year-old Scott, who was standing in his 400th league game as the Toffees manager on Saturday, praised the way his side conducted themselves after being pegged down by an early goal.
He said that the team threw everything at the Black Cats after the restart and feels that they reaped the reward of their hard work at the end.
“It was great, we showed great character throughout. We never gave in, we kept knocking at the door, kept trying to score, trying everything,” he told the reporters.
“They made it really hard for us to get through and I actually thought after 70 minutes this might not come, but in the end it did and it was a great three points for us.”
The win enabled Everton to get back to winning ways, after having played four draws on the bounce.
However, Moyes called upon his side to further tighten the screws in the backline.
He insisted that they need to come up with more commanding performances at home if they are to compete with their top-four rivals, and should not offer too many spaces for the attackers to work with.
“The best teams can attack but the best also have top defenders and make sure the opposition don't get many opportunities,” he added.
