after taking the cheese out, are you supposed to drain the water? keep it and put the leftover cheese back in it? replace the water with tap water before putting the cheese back in? put the cheese back in on its own?

  1. I take the cheese out, throw away the water, and slice off the part I dont need. I immediately put that in a small container with a lid, put it in the fridge, and use within a day.

As long as its in a container with a lid, it wont dry out in a day, and you shouldnt have to worry about contamination.

  2. i wouldnt keep it for too long after you open it and i would just get a new plastic bag and DO NOT put any water in it....but i would not leave it to long because it could loose some of its flavor.

  3. Take out what you want and replace in the original water. It comes with a top so replace it with that- and use within 3 days of opening.

My favorite is to cut up tomatoes and fresh mozzarella into bite size pieces, add chopped fresh basil and a splash of balsalmic vinegar, a splash of olive oil, and salt and pepper to taste- let sit while you cook spaghetti. Add hot spaghetti to the tomato mixture and serve with bread. Yum.
