does anyone have recipes for tarts,pies,muffins or cakes using oil and not butter?

    4 eggs, lightly beaten

    2 cups white sugar

    1 1/2 cups strawberries, mashed

    1 cup mashed bananas

    1 tablespoon orange zest

    1 cup vegetable oil

    3 cups all-purpose flour

    1 teaspoon baking soda

    1 1/2 teaspoons ground cinnamon

    1/2 teaspoon salt

    1/4 teaspoon ground nutmeg

    1 cup chopped walnuts

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Grease two 9x5 inch pans.

    In a medium bowl, mix together flour, baking soda, cinnamon, salt, and nutmeg.

    In a large bowl, combine eggs, sugar, strawberries, bananas, orange peel, and oil. Beat with an electric mixer at medium speed for 2 minutes. Add flour mixture, and stir just until moistened. Stir in walnuts.

    Bake for 1 hour, or until loaves test done. Remove to wire rack to cool.

    DIRECTIONS

    Preheat oven to 400 degrees F (205 degrees C).

    Grease muffin cups or use papers. Beat egg with a fork. Stir in milk and oil. Sift four and measure. Add sugar, baking powder and salt. Add egg mixture to flour and stir until flour is moistened. BATTER SHOULD BE LUMPY. DO NOT OVERMIX.

    Fill muffin cups 2/3 full. Bake 20 to 25 minutes until golden brown. Muffins should have rounded and pebbled tops. Serve warm.

    DIRECTIONS

    Preheat oven to 325 degrees F (165 degrees C). Spray one 9x5 inch loaf pan with non-stick spray coating.

    Blend together the eggs, buttermilk, oil and bananas.

    Sift together the sugar, flour, baking soda and salt. Add to banana mixture and stir in pecans. Mix well.

    Pour into prepared loaf pan and bake 1 hour and 20 minutes or until a cake tester inserted in the center comes out clean.

    Coffee Cake Marvel

    1 pkg. yellow cake mix

    ¾ c. oil

    1 pkg. instant vanilla pudding

    ¾ c. water

    4 eggs

    1 t. vanilla

    1 t. imitation butter flavoring

    Mix first four ingredients, then add eggs, one at a time. Beat 6 minutes on high speed. During last few minutes add flavorings. In a well-greased and floured pan, alternate layers of cake batter and sugar mixture. Bake in a Bundt pan 40-50 minutes at 350°. Let stand for 8 minutes then remove and glaze when warm.

    Glaze:

    1 c. powdered sugar

    1 T. milk

    ½ t. vanilla

    ½ t. butter flavoring
