Best to try Bandra or Juhu Beach area as there are more expats and you are likely to have a better time.  Went to the V lounge and Zenzi last week - both excellent.  The Five star hotels are likely to be a bit stuffy.  As a treat go to Dome at the Intercontinental on Marine Drive - open air bar/restuarant which is fantastic.

Otherwise try Insomnia at the Taj Mahal Palace Hotel opposite the gateway to India - went on Saturday - pumping western & bollywood music and was open until 3am.
