I have chicken already in the freezer!! and I really want 2 use it 2 save $(more $ 4 drinks..lol)I need heLp ASAP...thanks

  1. Let's be honest... casseroles are just not very romantic.  You want something that is more bistro style.

    Slice your chicken and stir-fry it in a non-stick skillet in on 1 TBS of oil over medium heat.  Add a jar of roasted red peppers (packed in water, drained, rinsed, chopped), and a small can of sliced olives (black or green -- or calamata, or even capers will work here), and half a can of chicken broth with 2 tsp of flour stirred into it.  Have all the peppers, broth, and olives ready to add because once the chicken has been fried until just done, you have to work quickly to make sure it does not become overcooked.

    Serve over rice.

    Alternative:  Pound the chicken breast filet to about half their original thickness with a meat hammer or the back edge of your biggest knife.  Coat the top and bottom with flour and salt and pepper.  Fry in a skillet with butter until they are just done, and then add a few tablespoons of white wine.  Slice and serve over rice with the pan juices, or take the cutlets and put them on a nice sandwich with provelone cheese and any other fixings you might like.


  2. If you are going out drinking after you eat I would say not to fix anything too spicy. How about lightly season the chicken and bake it. You can have mashed potatoes, some kind of corn and rolls.

  3. Who says a casserole can't be romantic?  Anything can be romantic with a little mood lighting. You want something that is simple and DELICIOUS (as stated in your question).

  4. What kind of chicken? Chicken on the bone? Boneless chicken breast? If it's boneless, I would say chicken parm.
