  1. Yes.  Unless the leaves died because the entire plant died...then the beet would be one shriveled little tuber.

    But I hope you know that beet greens are quite tasty by themselves and should be harvested with the beets.


  2. Unless the whole plant is dried up, you should be ok. Pull one of the plants and see if the beet is the size you like. If you leave them to long, they can get tough and "chewy". The leaves normally start to die off from the bottom to the top. This indicates the plant is mature and reaching the end of it's life cycle.
