My bread machine keep crashing top of loaves when baking help?

i got a sunbeam 5890 all bread loaves crashed on the top when baking--(I have baked bread by hand for 30 years)- called sunbeam they replaced it 3 times-- & now replaced it with a oster - bread is still crashing when baking--i tried different yeasts- flours- recipes-all flop on the top causing a dense heavy bread---at my wits end-WHAT IS CAUSING THIS--never had these problems in Illinois

  1. add a 1/2 pinch of salt to the dough.your at a different elevation and yeast rises easier.a very little salt should slow it down.


  2. It sounds like the bread is rising too much.  Cut back on the yeast.

  3. OVERRISES AND THEN SINKS

    Too much leavning action

    1.Decrease liquid

    2.Decrease sugar by 50%

    3.Decrease yeast by 25%

    4.Increase fat by 50%

    TOO DENSE

    Inadequate gluten structure or insufficient leavening

    1.Add wheat gluten(1-1/2 teaspoons per cup whole-grain flour)

    2.Substitute bread flour for some of the whole-grain flour

    3.Reduce salt by 50%

    4.Increase sugar by 50
