  1. For the most part, most cheeses are either very low in lactose or basically lactose free.  The process that turns the milk into cheese alters the lactose content of milk, as the bacteria convert it into cheese.  That only applies to hard, aged cheeses- though.  Not things like cottage cheese, or some of the softer types.  However, if your daughter has low to no tolerance, then you would need to look for soy cheeses, and there are even some made from rice and almonds.  You would need to check out the local health food shops, or a place like Whole Foods Market, or Trader Joes.  You can also make cheese yourself, with milk you have treated to make lactose free, or purchased lactose free.  Cottage cheese and cream cheese is actually not that hard to make yourself, and you can get cultures to make other types by doing a web search for cheese making supplies.  My niece is also lactose intolerant, but she loves aged cheddar and can eat it quite easily.  I think the brand Findlandia also is considered lactose free, although you would want to check that out first.  Good luck.

  2. Minerva cheese and dairy in Minerva, Ohio is a distributor of lactose free cheese.
